
These minty wonders were a joy! Marley and I made them together. We got the recipe off the Nestle Dark Chocolate and Mint Morsels Bag.
Mint chocolate Delights
Combine 2 c sugar, 2/3 baking cocoa, 1 t. baking soda and 1/2 t. salt in small bowl. Beat 1 c. butter, 2/3 c. granulated sugar, 2/3 c. brown sugar, and 1 t. vanilla extract in large mixer until creamy. Add 2 eggs, one at a time beating well after each addition. Gradually beat in flour mixture. Stir in morsels. Drop by well-rounded tablespoon onto ungreased baking sheets. Bake 11-13 min at 325 or until cookies are puffed and the centers are set. Cool on baking sheets for two min. remove to wire racks to cool completely. This makes 4 dozen cookies. We cut the recpie in half to make a couple dozen instead.

We took some of the dough and put it into a pie pan and made a pie cookie out of it. We just cooked it a little longer. Maybe 10 minutes more to make this lovely mint cookie pie. This recipe? Totally a keeper. The girls agree.
